近年來飼主們越來越瞭解到「貓狗是天生的肉食動物」,以及「動物性蛋白質優於植物性蛋白質來源」,但造成品質好壞差異的原因是什麼?在這篇文章裡,卡尼來談談蛋白質質量好壞的指標——生物價。
 

 

什麼是蛋白質生物價?

生物價(Biological Value)是一種評估蛋白質營養價值高低的計算值,簡單來說,就是「食物中蛋白質真正可被生物體有效吸收和利用的程度」

生物價的算法是,將生物所保留的氮量,與所攝取的氮量,相除所得到的百分比值。此計算法有考慮到蛋白質的消化吸收率,是目前評定蛋白質品質最常用的方式。

正因為生物價反映食物蛋白質消化吸收後被生物體所利用的程度,因此,生物價越高的食物,對動物來說也就更容易吸收和消化。

高生物價的蛋白質

相信大家都聽過要給貓狗「好的蛋白質」,尤其是中、熟齡或患有疾病的貓狗更是需要。以營養學的角度來說,生物價越高則品質越好,越能被動物吸收和利用,代謝產生的含氮廢物也較少。而高生物價的蛋白質便是圖片中橘色範圍的食材,可以明顯看出,高生物價的蛋白質全是動物性來源。


 

 

營養的質與量

除了蛋白質,不同形式及來源的礦物質,也都有不同且相差甚鉅的生物利用率。

舉例來說,常見的鋅化合物如:葡萄糖酸鋅、硫酸鋅、檸檬酸鋅等,生物的蓄積率皆不高。但天然螯合型態的鋅,其被生物體所吸收和利用的程度,卻是鋅化合物的 3~10 倍不等。

 

 

營養遠不止於一個數字

寵物食品中各項營養的「質」與「量」一樣重要。

乾飼料中常見的蛋白質來源和礦物質補充,除了生物利用率不佳,同時容易造成消化器官的負擔。選擇新鮮、不過度加工的食物,能夠攝取到高生物價的蛋白質及高利用率的營養,也正是生肉餐最大的好處之一。

而目前 AAFCO 或 NRC 在制定犬貓營養標準時,仍未有針對不同生物利用率的營養來源進行調整。這部分也是將來在訂定伴侶動物營養標準時,應該進一步加強的地方。
